Deviled Soy Sauce Tea Eggs

Indulge in the playful fusion of Chinese and Ghanaian cuisine & traditional deviled eggs with these Deviled Soy Sauce Tea Eggs. These culinary rebels are sure to impress friends and family when you bring these appetizers for gatherings.
Ingredients
For Soy Sauce Tea Eggs:
6 – 8 eggs
2 cups water
1/2 cup soy sauce
2 tablespoons loose black tea leaves or 2 black tea bags
2 star anise pods
For Deviled Eggs Filling:
3 tablespoons mayonnaise (Japanese mayonnaise like Kewpie is best)
2 teaspoons of your hot sauce of choice (we use BLAC GOLD™)
1 teaspoon capers
cayenne pepper to taste
paprika to taste & for garnish
parsley for garnish (optional)
Instructions
Soy Sauce Tea Eggs
Step 1
Place the eggs in the air fryer for 15 minutes at 275ºF.
Alternatively, you could place the eggs in a saucepan and cover them with water. Bring the water to a boil and then turn off the heat and let the eggs sit for 10 minutes.
Step 2
While the eggs are cooking, in another saucepan, combine the water, loose tea leaves (or black tea bags), soy sauce & star anise. Bring this mixture to a boil, then reduce the heat and simmer for 10 minutes.
Step 3
Once the hard-boiled eggs are done, gently tap each egg all over to create small cracks on the surface. Be careful not to peel them. You want to create a marbled effect when they soak in the tea mixture.
Step 4
Place the cracked eggs into the soy sauce tea mixture. Make sure they are fully submerged. Simmer for another 20-30 minutes to infuse flavor and create a marbled pattern.
Step 5
Let them cool to room temperature and then remove the eggs from the tea mixture.
Deviled Eggs
Step 1
Once the soy sauce tea eggs are thoroughly marinated, peel them and cut them in half lengthwise. Gently scoop out the yolks and transfer them to a mixing bowl.
Step 2
Mash the yolks and add mayonnaise, hot sauce, paprika, and cayenne pepper. Mix until you have a smooth and creamy yolk filling. Fold in the capers.
Step 3
Adjust the ingredients as needed to achieve the desired flavor.
Assembly
Step 1
Carefully fill each egg white half with the deviled egg mixture, either by spooning it in or using a piping bag. You can create your own piping bag by filling a ziploc bag with the mixture and cutting off a corner of the bag that’s about a little less than half an inch.
Step 2
Sprinkle a pinch of paprika on top of each deviled egg for color and flavor.
Step 3
Garnish with a dot of hot sauce (we used Ghanaian hot sauce, BLAC GOLD™) for a pop of flavor and a sprig of parsley (optional) on top.
